Abstract

This research was conducted in the Sokaraja District, Banyumas Regency,
Central Java, from August to November 2023. The objectives of this study are: 1)
to understand the cassava processing into fried cassava in the fried cassava
agroindustry in Sokaraja District, Banyumas Regency, Jawa Tengah; 2) to
determine the labor compensation expended in the fried cassava agroindustry in
Sokaraja District, Banyumas Regency, Jawa Tengah; 3) to identify the number of
workers employed in the fried cassava agroindustry in Sokaraja District,
Banyumas Regency, Jawa Tengah; 4) to ascertain the value-added obtained in the
fried cassava agroindustry in Sokaraja District, Banyumas Regency, Central
Java.
The method used is quantitative descriptive, utilizing both primary and
secondary data. The sample selection technique employs purposive sampling,
deliberately choosing 27 fried cassava agroindustries in Sokaraja District,
Banyumas Regency, Jawa Tengah.
The findings of this research are as follows: 1) The cassava processing
into fried cassava begins with sorting, peeling, cleaning, steaming, separating
cassava fibers, melting brown sugar, grinding, mixing additional ingredients,
cutting, frying, and packaging. The technology used is semi-traditional. 2) The
direct labor compensation in the fried cassava agroindustry for one production
process is Rp 1,458/kg or 4.47%. 3) The workforce absorbed from the fried
cassava production process is 5.36 person-days. The fried cassava agroindustry
falls under labor-intensive agroindustry. 4) The value-added obtained from
cassava processing into fried cassava is Rp 31,159, with a ratio of 55.92%. The
profit received is Rp 31,159/kg, with a ratio of 95.53%. The value-added ratio
from cassava processing into fried cassava falls into the high category.
