colon cancer is recorded as the third rank in the incidence of cancer and the second rank in the case of death in the world. Pepper oleoresin is a compound that has been scientifically proven to have anticancer activity as an alternative to modern medicine. Oleoresin can be obtained by extracting white pepper which has gone through a fermentation process using a tempeh yeast starter. Method: this research uses a Literature Review, which is a systematic, explicit, and reproducible method to identify, evaluate and synthesize research works and ideas that have been produced by researchers and practitioners. Results: white pepper fermented by tempeh yeast is predicted to have higher yield of essential oil and piperine. Oleoresin extraction using soxhlet extraction with ethanol solvent, material size 40 mesh, extraction temperature 600C-800C, and extraction time 3-4 hours are predicted to produce high yields, do not cause the essential oil evaporates and oxidize and do not cause a reduction in the identified oleoresin constituents. White pepper oleoresin fermented by tempeh yeast is predicted to have anticancer activity against colon cancer cells WiDr. Conclusion: white pepper oleoresin fermented by tempeh yeast is predicted to have anticancer activity against colon cancer cells WiDr.
