Ice cream is one of favorite foods in Indonesia for young and old. The majority of population in Indonesia is Islam. The foods was taken have to halal. The study was aimed to halal identification of ice cream by analyze of lard. The fat from ice cream was taken by soxhlet method and using FTIR spectroscopy with principle component analysis (PCA) and partial least square (PLS) calibration to qualitative and quantitative analysis. The specific region of lard is in 3008.95; 1234.44; 1033.85; and 717.52 cm-1. For quantitative analysis with PLS is selected the specific regions of lard, the equation obtained for the relationship between actual and predicted lard values in PLS calibration model was y=0.9941x+0.1204, with coefficient of determination (R2) and root mean square of calibration are 0.9991 and 0.1. The equation obtained in PLS validation model was y=1.0043x-0.0376, with coefficient of determination (R2) and root mean square of validation are 0.9993 and 0.0274. The result showed that FTIR spectroscopy can be used for identification and quantification of lard in ice cream formulation for halal verification purpose. The PCA analysis of FTIR spectrum from this research was showed that all of sample analysis from market there is no any approached the lard region.
