Abstract

Ice cubes are used a lots in drinks served in street peddlers, canteen, and restaurants. They are made through some stages in each of which there are potentials of pathogen bacterial pollution. This study was aimed to find out whether or not the ice cubes used in the drinks sold in a campus area of the university have complied to the conditions ruled by SNI 7388 Year of 2009 about the maximum of bacterial pollutants in food. The sampling was done by accidental sampling techniques, taking 5 samples. The testing was done by using Total Plate Count (TPC) and Most Probable Number (MPN) of coliform, and indentification of the Salmonella sp.Bacteriathe result proves that all the samples contain mesophilic aerobic bacteria (1 x 104 colony/gram), Coliform (<3.0) and Salmonellasp. Their numbers have exceeded the limit determined in SNI 7388 2009.
