Students as the biggest market for fish-based snacks should aware of the importance
of their food hygiene. This type of snacks is very vulnerable to bacterial pollution.
Based on preliminary survey, the process of cooking and packaging generally ignores
the cleanness and the hygiene, which makes the food easily contaminated by bacteria.
In turn, it causes food poisoning or foodborne disease.
This study is to reveal the microbe pollutants contained in the foods vended by the
snack peddlers in the area of campus I of the University of Muhammadiyah
Purwokerto. The big question is whether or not the foods have complied to the rules
of SNI 7388 Year 2009 about the maximum pollutants in the food. The sampling
done is accidental sampling by taking 5 samples. The pollutant testing covers TPC
(total plate count) test, MPN (most probable number) of coliform test, and
identification of Salmonella sp bacteria. Based on the result of the tests, all the
samples contain aerobic mesophile bacteria (>5x105koloni/g), coliform (>3/g) and
Salmonella sp of which number has much exceeded the threshold ruled by SNI 7388
Year 2009.
