Abstract

Water as basic ingredient of es lilin must conform the requirements of drinking water. Those requirements are chemical, physic, microbiology, and radioactive. Es lilin produced from water which does not conform the standard can increase the risk of microbial contamination. This study aims to determine whether es lilin sold at elementary school in Kutasari, Purbalingga meet the standarts set in SNI 7388 on maximum limit of microbial contamination in foods. The sampling technique of this study used accidental sampling with 5 samples. The microbial contamination was analyzed used TPC (total plate count), MPN (most probably number) of coliform, and identification of Salmonella sp. The results shown that samples 1, 3, and 4 meet the requirements set in SNI 7388. Samples 2 and 5 did not conform the standart since they contain Coliform and Salmonella sp.
