Water as basic ingredient of ice cream must conform the requirements of drinking water. Ice cream produced from water which does not conform the standard is possibly increase the risk of microbial contamination. The requirements are chemical, physic, radioactive, and microbiology. This study aims to determine whether ice cream sold at elementary school in Kalimanah, Purbalingga meet the standarts set in SNI 7388 on maximum limit of microbial contamination in foods. The sampling technique of this study was accidental sampling with 6 samples. The microbial contamination was analyzed used TPC (Total Plate Count), and identification of Salmonella sp. The results showed that 3 of 6 samples meet requirement of the standard in complete the condition.
