Abstract

Water as the basic ingredient of flavored ice must conform the requirements of
drinking water. The requirements are chemical, physical, microbiological, and
radioactive. Flavored ice produced from unstandardized water is possibly increase
the risk of microbial contamination. This study aims to determine whether flavored
ice sold at Elementary School in Padamara, Purbalingga meet the standarts set in SNI
7388, 2009 on maximum limit of microbial contamination in foods. The sampling
technique of this study used accidental sampling with 6 samples. The microbial
contamination was analyzed using TPC (total plate count), MPN (most probably
number) of coliform, and identification of Salmonella sp. The results show that 5 of 6
tested samples of flavored ice meet the standarts set in SNI 7388 2009 on maximum
limit of microbial contamination in foods.
