Abstract

Essential oil (EO) of lemongrass (
Cymbopogon citratus
) and clove
(
Syzygium aromaticum
) had antimicrobial activity. This research was aimed to
analyze lemongrass and clove EOs chemical constituents and potency of their
combination as natural preservative on chicken meat. The chemical constituents
were analyzed by Gas Chromatography-Mass Spectrometry (GC-MS) and its
potency as natural preservative was determined by its organoleptic aspect and its
activity inhibiting bacterial growth on chicken meat. The major constituents of
lemongrass EO were geranyl acetate (19.72%), geraniol (19.06%) and citronella
(17.83%). The major constituents of clove EO were eugenol (67%), trans-
β
-
caryophyllene (25.64%) and humulene (2.66%). Lemongrass and clove EOs
combination at concentration of 0.2:2% had natural preservative potency on
chicken meat. The potency of this combination was better than single EO, which
is able to inhibiting bacterial growth until 15
th
day of storage at 2-7

ture. However, the ability of prolonging chicken meat’s shelf life was not
as good on a single EO, which only prolong its shelf life up to 9 days at 2-7
