Abstract
Consuming Salak Pondoh fruit (Salacca Edulis Reinw) in Indonesia always above 1 million tons every year. Consume a lot of fruit flesh apparently it is not in line with the use of fruit peels, which is often considered discarded organic waste is wasted. The lack of optimal use of fruit peels as organic waste can open up oppurtunities to develop other alternatives, such as using fruit peels as a source of pectin. The extraction of pectin from fruit skin is carried out using the maceration extraction method in citric acid solvent. The aim of this research is to determine influence the ratio of material : solvent and solvent concentration as well as knowing the characteristics of the pectin produtcts. The result of this research show that the highest ratio of material : solvent is in the ratio of 1:40 (gr/mL) with the value of %yield is 13,15%. On variation solvent concentration, the highest concentration is in the variation of 10% with the value of %yield is 17,5%. The characteristics of pectin products has the highest eqivalent weight was 114,94 mg, the highest methoxyl content was 9,92%, the highest galacturonate levels was 1063,04%. Functional group analysis with FTIR shows the presence of the O-H functional group at a wavelength of 3255 cm-1, the C-H aliphatic functional group at a wavelength of 2808 cm-1, the carboxyl functional group (C=O) 1838 cm-1, and the presence of the functional group of C-H methyl at a wavelength 1442 cm-1.
