The research entitled the history of palm sugar production in Babakan village, Karanglewas sub-district, Banyumas (1995-2005) includes several problem formulations (1) How is the history of palm sugar making (2) How is the development of palm sugar in Babakan village in 1995-2005 (3) How is its impact on the lives of the farmers. This study uses historical research methods that include 4 steps: heuristics, criticism, interpretation, and historiography through the collection of various primary and secondary data. The data sources in this study were taken from interviewing informants and observations of the activities of making palm sugar in Babakan village. The results of the study show that: (1) The production of palm sugar, especially in Babakan village, existed even before independence, with the narrative of an informant who stated that his parents were also penderes (farmers) during his life, (2) The production of palm sugar in Babakan village is classified as a home industry that has a socio-economic impact on the community. Home industry craftsmen still produce palm sugar as a food ingredient using natural ingredients and simple methods to maintain its authenticity without using a mixture of chemicals in the production process.
