Abstract

Indonesia's rice production in 2018 has reached 56.54 million tons of milled dry grain (BPS, 2018). Rice is the main product of paddy which has side products in the form of groats, broken rice, husks and bran. The type of rice used is IR 64 varieties. The purpose of this research to determine the effect of the stabilization process on the bran lipase enzyme, so it can be seen which stabilization method is the best. Stabilization was carried out using the heating method with an open valve autoclave and a closed valve at 5, 10, 15, 20 and 25 minutes. The bran extraction is carried out using Soxhlet with N-hexane solvent. The results showed that the stabilization time has an effect on moisture content, yield and FFA. Heating stabilization has an effect on yield and FFA. The effect of heating stabilization using a closed valve autoclave at the highest time, which is 25 minutes, the yield was 17.6% and FFA was 13.4%. And heating stabilization using an open valve autoclave at the highest time, which is 25 minutes, the yield was 10.1% and FFA was 43.7%.
