Abstract

Background : Gelatin is one an important of materials in the Pharmaceutical and non-pharmaceutical industry, the use a very extensive of gelatin encountered some obstacles that most known commercial gelatin derived from pigs and cows bones extract. The raw material used is a major issue for people of faith in Indonesia. In this study as an alternative to reducing the use of gelatin from pigs. The amount of industrial waste bones fish bones, where the bones of waste tilapia potential to be used as an alternative to gelatin with characteristic properties of the physico chemical. Objective : The research aim to make and use tilapia skeleton become gelatin and to know its randemen. Furthermore to know gelatin of fresh and mature tilapia skeleton. Methods : The method is experimental because there is intervention to the samples. Gelatine of tilapia skeleton was analyzed to know physico-chemical characteristics with commercial gelatin comparing. Results :. The results of this study showed a difference of FTIR analysis, yield, organoleptic, pH and water content. TNS and TNM typical groups analysis and of gelatin can be evidenced groups N-H, O-H, C = O and on test FTIR spectrophotometry. The structure of the amino acids contained of gelatin farmasetis is prolin and hidroksiprolin while TNS and TNM of gelatin containing amino acid is glutamat acid, lisin dan arginin. Another physcal difference lies in the odor of sample of gelatin TNS and TNM more typical fish, bland taste, and color of the sample is darker than of gelatin farmasetis. Yield resulting from TNS of gelatin yield of 10.21%, while 10.22% of gelatin TNM. TNS of gelatin pH, TNM, and of gelatin farmasetis is 3.82; 3.82, and 5.83. The water content of gelatin TNS, TNM, and gelatin farmasetis is 8.05; 5.49 and 11.94. The influence of the difference of raw materials and processing. Conclusion : utilization of tilapia bones have potential as a substitute for gelatin.
